Everything began with the first recipe sketches drawn on the kitchen counter. Our respect for the ingredients gives our tables their simple yet deep character: a few ingredients, the right heat and enough time.
Our pasta is rolled by hand every day, our sauces simmer over a low flame, our dough rises in its own time. We do not look for shortcuts. Every day we cook with ingredients that arrived fresh that morning.
